Chef
to lead our
Fermentation Lab
team - a vibrant workshop where traditional techniques meet groundbreaking gastronomy.
Here, you'll design and prepare an extraordinary range of fermented foods that will feature in both our Michelin-starred
Saporium
restaurant and our beloved
Trattoria sull'Albero.
With access to over 200 types of vegetables and 50 varieties of herbs from our 300-acre organic farm, you'll have the unique opportunity to transform the bounty of our land into complex, nuanced culinary creations, catering to international guests in a world-class setting.
Your role in the kitchen:Develop innovative recipes using fermentation techniques, exploring new textures and flavors. Design and craft a diverse range of fermented foods, ensuring creativity and quality in every dish. Source high-quality, seasonal ingredients to create exclusive, seasonal dishes that highlight the best of nature's offerings. Experiment with new flavors and develop creative recipes that align with the group's culinary philosophy, pushing boundaries while staying true to core values. Lead training sessions for the team, sharing expertise on fermentation processes and techniques to enhance overall skills. Collaborate closely with the chefs to integrate fermented foods into the menu, adding depth and innovation to every dish. Ensure all food safety and hygiene standards are consistently upheld, maintaining the highest level of quality in every aspect of food preparation.
What we're looking for:Proficiency in English is required. At least three years of experience in a professional kitchen, with a preference for experience in fermentation techniques and processes. A solid understanding of fermentation techniques is essential. An associate's degree, diploma, or certification in culinary arts is highly desirable. HACCP certification is mandatory. A strong knowledge of food health and safety regulations is required to ensure compliance and quality. Ability to work efficiently under pressure while maintaining high standards. Exceptional organizational skills, ensuring smooth and effective kitchen operations. Strong communication skills, enabling clear and efficient collaboration with the team.
