Location: High-end restaurant on a Luxury Train Reports to: Chef de Partie Department: Culinary Overview We are seeking a motivated and enthusiastic Commis de Cuisine to join our esteemed kitchen team aboard La Dolce Vita Orient Express luxury train.
The successful candidate will assist in food preparation and support the kitchen team, ensuring the highest standards of culinary excellence and contributing to an extraordinary dining experience for our guests.
Key Responsibilities - Food Preparation: Assist in the preparation and cooking of dishes as directed by the Chef de Partie, ensuring consistency and excellence in every plate.
- Ingredient Management: Ensure all ingredients are properly stored, labeled, and organized.
Prepare ingredients for cooking, including chopping, portioning, and measuring.
- Maintaining Hygiene: Uphold strict hygiene and safety standards in accordance with health regulations and the kitchen's stringent policies, adapting to the specific constraints of a train setting.
- Cleaning Duties: Maintain cleanliness and organization of the kitchen, including washing dishes, cleaning surfaces, and ensuring all equipment is properly sanitized.
- Team Collaboration: Work collaboratively with the kitchen team, fostering a positive and efficient working environment in a confined space.
- Adaptability: Adapt to the unique challenges of working in a mobile kitchen, ensuring high-quality standards are consistently met despite the dynamic environment.
- Grooming: Observe the kitchen staff's personal hygiene (e. g. , keep your fingernails short and clean, keep your hair and beards neat and tidy, wash hands frequently and thoroughly with soap, work on a clean surface, etc. ).
Qualifications Education / Experience: - Experience: Proven experience (at least 3 years) in a kitchen environment, preferably in a high-end, fine dining setting.
Experience in a mobile kitchen or unique dining setting is a plus.
- Culinary Education: Basic culinary training or relevant certification is preferred but not required.
- Culinary Skills: Basic knowledge of various cooking methods, ingredients, equipment, and procedures.
Soft Skills: - Attention to Detail: Keen attention to detail and a commitment to producing high-quality dishes.
- Time Management: Good time management skills with the ability to prioritize tasks and work efficiently under pressure.
- Communication: Strong communication and interpersonal skills to effectively collaborate with the kitchen team and other staff.
- Adaptability: Ability to adapt to the unique challenges of cooking in a moving train environment.
- Ability to work in a fast-paced environment and handle high-pressure situations.
