NoOffer DescriptionThe challenge of this project is to promote the upcycling of BSG by proposing innovative solutions that can increase the value of the by-product to make it affordable overall for small and medium-sized breweries.

This will be achieved by i) stabilizing raw BSG by rapid moisture reduction that includes an energy-saving drying operation and then ii) formulating recipes and protocols by implementing BSG by-products obtained from previous activities to improve techno-functional properties and nutritional value in a high-fiber bread model.
