The Director of Food and Beverage will oversee all F&B related preopening activities, development of key strategies & operations for the entire Food & Beverage department encompassing one restaurant, two bars, in-room dining services and the banqueting operations.
Candidate profile - Education and Experience 2-year degree from an accredited university in Hotel, Culinary or Restaurant Management. Or High school diploma, 3 years' experience as Food and Beverage Director or similar role in upper luxury hotels or related professional area. International and regional, ideally pre-opening experience preferred. Fluent in English and Italian.
Key Strategies
Ensures that the Food and Beverage activities are aligned with the respective Corporate and Hotel Strategy to ensure all actions are implemented for a successful opening. Model the company's culture, vision, mission and core values at all times. Oversee the pre-opening preparation, reviews and updates individual Departmental Operations Manuals and SOPs. Conduct regular divisional and departmental communications meetings and ensure that departmental daily briefings and meetings are effective and conducted consistently. Leads by example and has hands on approach. Liaises with Culinary Division and all other departments within the hotel. Creates an environment of respect, trust and diversity. Guest Satisfaction
Ensures that all associates deliver the brand promise and provide exceptional guest service at all times. Ensures that associates also provide excellent service to internal customers in other divisions as appropriate. Spends time in public areas observing associate-guest interaction and talking with guests, works through Department Heads to coach associates in guest service skills as necessary. Ensures that all guest and internal customer complaints are resolved in a quick and efficient manner. Maintains positive guest and colleague interactions with good working relationships. Finance
Maximizes associate productivity using multi-skilling, multi-tasking and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests. Ensure that each profit center (e. g. Outlet, Bar, Events) is operated in line with maximizing profit while delivering on the brand promise. Assists in the preparation of the Annual Business Plan for Food and Beverage. Analyses business performance strategically to facilitate accurate and meaningful forecasting, involving the respective Department Heads as appropriate. Manages costs proactively based on key performance indicators, working with the respective Department Heads as appropriate. Ensures that all hotel, company and local rules, policies and regulations relating to financial record keeping, money handling and licensing are adhered to, including the timely and accurate reporting of financial information. Assists in inventory management and ongoing maintenance of hotel operating equipment and other assets. In particular, high use assets such as chinaware, glassware and flatware. Participates in weekly yield and revenue management meetings actively, oversees the appropriate pricing structures to maximize yield and overall profits in Outlets and Events. Responsible for control of beverage program including recipes, inventory and progressive menu development. Reviews uniform and grooming standards of the team daily. F&B Marketing
Assists in the preparation, utilization and update of the Annual Marketing Plan, broken down by his departments. Evaluates local, national and international market trends, vendors and other hotel/restaurant operations constantly to make sure that the hotel's operations remain competitive and cutting edge. Encourages Department Heads to look for Marketing and Public Relations opportunities to increase awareness and ultimately business. Operations Execution
Ensures that all brand standards have been implemented and trained, and that Forbes and LQA standards have been implemented for a successful opening. Leads the daily F&B operational briefs and ensures all F&B teams and departments do the same and embrace the Rosewood culture. Ensure that all Food and Beverage Fundamentals are introduced, implemented and consistently maintained. Ensures that the Food and Beverage Division responds to the results of the Consumer Audit and to ensure that the relevant changes are implemented. Laser Focus on Guest Satisfaction is required. Works closely with other Executive Committee members in a supportive and flexible manner, focusing on the overall success of the hotel and the satisfaction of hotel guests. Ensures that Food and Beverage associates work in a supportive and flexible manner with other departments, in the spirit of "We work through Teams". Leading by Example. Tastes and monitors the food and beverage products served throughout the operation provides feedback where appropriate for always seeking to enhance the quality and guest experience. Maintains and assists in outlets during the absence of respective managers. Talent and Culture
Overseas and assists in the recruitment and selection of all Food and Beverage associates. Ensures that Department Heads follow hotel guidelines when recruiting and use a competency-based approach to selecting their associates. Oversee the punctuality and appearance of all Food and Beverage associates, making sure that they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department's grooming standards. Maximizes the effectiveness of Department Heads by developing each of their skills and abilities through appropriate training, coaching, and/or mentoring. Conducts annual Performance Development Discussions with key Food and Beverage associates and supports them in their professional development goals. Ensure that they in turn conduct annual Performance Development Discussions with their associates. Ensures that each Department Head plans and implements effective training programs for their associates in coordination with the Talent Development Manager and their Departmental Trainers. Ensure that all associates have a complete understanding of and adhere to associate rules and regulations. Ensure an efficient and well-organized department, ensuring all associates are well trained and highly motivated. Ensures that associates follow all hotel, company and local rules, policies and regulations relating to fire and hazard safety, and security. About Us Located in the former headquarters of Italy's Banca Nazionale del Lavoro (BNL) overlooking the iconic Via Veneto, Rosewood Rome will encompass three historic buildings, each of which were originally built in the early 1900s. The crown jewel of the project will be the reimagination of the former BNL headquarters, the main unit of the development that was initially designed by renowned Italian architect and urban planner Marcello Piacentini. The design will take influence from the hotel's location overlooking Via Veneto, one of Rome's most elegant streets and a symbol of the celebrated Federico Fellini film, La Dolce Vita, with elegant interiors that blend timeless style with contemporary comforts. In keeping with Rosewood's guiding A Sense of Place philosophy, Rome's relaxed ambiance and devotion to dolce far niente, or the art of "doing nothing, " will influence the hotel's design concept, which will mix traditional architectural elements with modern décor and detailing to create a sophisticated environment for the ultimate life of leisure.
Upon completion, Rosewood Rome will offer 155 accommodations, including 44 suites. Home to three dining outlets, including a contemporary Italian bistro, a lobby bar and café and a rooftop bar with a terrace with sweeping views of the city, the hotel will serve as a luxurious escape for locals and visitors alike. Additional amenities include a subterrain experience within the bank's original vault featuring a modern Roman Bathhouse and Sense, A Rosewood Spa, located on the rooftop which will feature four dedicated treatment rooms and a wellness terrace with a reflecting pool and dynamic fitness centre. Dedicated event spaces will encompass three meeting rooms and a grand ballroom.
