How does your working day look like … Manage food cost for all outlets in the hotel. Oversee budgeted manning levels. Develop overall budget for F&B production. Assist the Executive Chef in writing standard recipes to maintain acceptable food cost. Help minimize payroll costs by maximizing productivity and efficient scheduling of employees. Monitor kitchen operating costs and take corrective action to reduce expenses. Assist in developing menus, buffets, and specials that comply with company and hotel policies. Contribute to writing and updating the relevant section of the Departmental Operations Manual. Maximize employee productivity and morale while maintaining discipline according to hotel guidelines and local legislation. Ensure proper maintenance of operating and kitchen equipment to minimize breakage. Maintain good working relationships with colleagues and all other departments. Understand and adhere to company policies related to Fire, Hygiene, and Safety. Check incoming produce to ensure compliance with order sheets and purchasing specifications. Enforce good hygiene and sanitation procedures. Identify market needs and trends in food for hotel guests and the local market, while monitoring competitors. Perform any other duties as reasonably requested by management. Assist the Executive Chef with all administrative tasks.
Qualifications
Your personality counts more than your CV … College or Culinary graduate. BSc in Culinary Arts. Internationally approved Food Safety Certificate. 3 years in a similar role in a five-star hotel. Experience in European Kitchens/Cuisine. Experience with high volume production (10-20 outlets). Ability to work with multi-cultural teams. Managed around 200 colleagues. Banqueting experience. Good comprehension of the English language. Good computer skills. Able to communicate effectively with large teams. Fluency in other languages is a plus. Additional Information
