F&B Assistant Manager 2023 Season Hotel Cipriani

The F&B Assistant Manager reports to the Executive Assistant Manager (i/c F&B) and using considerable independent initiative and judgement, provides leadership and direction to ensure efficient, effective and profitable operation for F&B whilst supporting F&B initiatives as required.
He/she will assist in coordinating the day-to-day operations at the hotel that commensurate with running a successful commercial enterprise.
The role entails knowledge and expertise to facilitate F&B Operational set-ups, designs, concepts, etc.
**Requirements**:
- Implements general policies in relation to F&B Service established by Belmond.
- Maximize profitability and ensure that the market reputation is enhanced for the Hotel.
- Ensure cost effectiveness of F&B operations in the hotel thereby positively impacting the department and overall hotel profits.
- Maintain safe working practices and conditions and ensure correct and effective use of all resources which includes all F&B related tools and equipment.
- Coordinate, engage and liaise with customers and regular guests on service-related requests and improvements
- Coordinate, instruct and oversee the venue managers with their day to day needs and tasks
- Oversee the care and maintenance of all the F&B / restaurants' physical assets and facilities
- Conducts regular reviews of operational requirements to ensure best practice service
- Conduct F&B Audits within the hotel to maintain and align standards across the business.
- Implements and monitors the budget, monitors the quality of the food & beverage products and services, and ensures maximum guest satisfaction.
- Ensure that each profit center contributes the agreed budgeted profits.
- Assit EAM to review and analyze monthly results, highlighting opportunities and take appropriate action to rectify poor performance.
- Ensure that company and statutory hygiene standards are maintained in all areas.
- Ensure that complaints or problems are actioned without delay and that effective follow-up action takes place to avoid a recurrence.
This in particular reference to all types of audits and mystery shopper.
- Provide effective leadership through professional management and encouragement of associates
- Support the employee policies and actively promotes engagement in training along with professional development programmes.
OTHER RESPONSIBILITIES AND ACCOUNTABILITIES
- Assist in establishing critical path for pre and post opening
- Assist in establishing manning guides for F&B Operations
- Assist with establishing and proposing procurement of small operating equipment's for relevant areas
- Assisting in coordinating IT equipment and systems requirements for F&B Operations
- Actively participate in on boarding key positions within the F&B operations of the hotel
- Participate in planned site visits and ad hoc spot checks
- Ensure F&B training plan is in place for the Restaurant and In Room Dining team.
**Requirements**:
- Must have a minimum of 2 years' experience managing, in a leadership position at least one FB Venue in medium large-scale operations.
- Must have sound knowledge of food & beverage products
- Must be able to check cost control reports and be fully aware of the internal organisation of a catering, restaurants, in room dining and bar department
- Must be aware of hygiene standards and HACCP requirements
- Must be familiar with menu engineering
- Familiarity with Banquet revenue generation and yielding is an added advantage
- Good grasp of P&L analysis
- Must have refined skills in public relations
- Previous experience in similar and/or related fields in a 5* Hotel.
- Fluent English and additional languages desirable
- Impeccable personal presentation
