F&B Manager Italy Switzerland, Rome
PurposeWork collaboratively with the Food and Beverage Team in the Support Office to identify the strategic vision for food and beverage in citizenM and adapt this vision within a local context.
You will help our hotel managers with the F&B strategic execution in the respective properties, adding value to the guest experience whilst maximizing gross profit.
Working alongside the F&B Support Team, you will oversee the sourcing of product: local pricing strategy and training/development of the hotel teams in all matters relating to food and beverage, fostering strong partnerships with local suppliers.
You will at all times ensure the upkeep of food and beverage operating equipment and compliance with citizenM's Food Safety Policy and HACCP to maintain a safe environment, protecting the wellbeing of citizenM employees, contractors and guests alike. Key ResponsibilitiesSafeguard the quality of food and beverage at citizenM. Establish and foster strong relationships with local tastemakers. Oversee the evolution of the food and beverage proposition based on two main changes per annum reflecting spring/summer and autumn/winter. Provide practical training for new and existing AM, PM, and Night team members in all food and beverage items with a specific focus on coffee, wine, spirits, cocktails, and beer. Coaching and supporting skills growth of champions in your area. Provide training in the use of all equipment relating to food and beverage. Provide training to the food ambassadors in each hotel, equipping them to cook and present food items in line with the agreed standards. Provide training and support to assistant hotel managers to ensure they are fully equipped to order, invoice, and run the food and beverage operation smoothly. Work alongside citizenM's respective health and safety partner to ensure each property complies with local food safety legislation including adherence to citizenM HACCP policy. Ensure that in all areas of food and beverage we seek opportunities to demonstrate our commitment to the wellbeing of our planet by taking an intelligent approach to procurement, minimizing waste and seeking to reduce non-recyclable items to zero. Set up and maintain the area's inventory management and ordering system on a product level, making sure assistant hotel managers are able to order with our suppliers. Support month-end closure, inventory process and audit hotel teams. In partnership with the respective Area managers and Area hotel Managers, produce annual budgets for food and beverage revenue and cost of sales per property. In partnership with Area managers, hold HM accountable for delivering the F&B strategy up to par on quality and standards.
Audit and create action plan to support them. Responsible to create performance overview and plan to support the hotel on revenue, COGS, margin and optimized operational process. Work with the hotel managers to ensure monthly revenue targets are met through the availability of quality product and the training of teams to deliver complete service in all outlets canteenM, coffeeM, cloudM, and societyM. Work with the F&B support team, the hotel managers and assistant hotel managers to ensure costs are maintained in line with budget through menu engineering, smart ordering and accurate recording of consumption. Ensure all collateral pertaining to food and beverage is up to date with accurate pricing and in line with brand standards. Support brand and commercial initiatives. Maintain and grow relationships with existing suppliers and ensure that conditions are reviewed on a quarterly basis to ensure both parties are happy and growing together (quality, delivery, accuracy performance). Translating the cloudM strategy to the local market. Work with the F&B support team to ensure that they have key information regarding the operation on the floor to develop the best strategies.
Support hotel openings in your region, from 6 months out to post-opening market support. Qualifications / SkillsContemporary food service environment. Relevant working experience, preferably with hospitality and food service diploma. Smart, innovative thinker, negotiator, with an eye for detail. Proficient in Excel, Word and menu engineering. Experience with budgeting and cost management. Experience in dealing with suppliers and supplier performance. Proficient in finance and budgeting software. Training, hard and soft skills, pedagogically. Knowledge of country-specific food safety legislation. Fluent in verbal & written: English.
French and Italian is a plus. Right to work in Italy. Self-reliant, autonomous and proactive. Being a critical friend (sharing feedback with hotel teams, including Support, HM's and Area managers).
