**JOB SUMMARY**:
Responsible for implementing the F&B strategy in hotels and its implementation through standards in hotels based on product, qualities and f&b management.
Is responsible for overseeing the operation of hotels in the area and setting operational guidelines, and overseeing major events or volume.
Monitors compliance with established standards and objectives, informing the HM of possible deviations for immediate correction and periodically informing the Director of the Operations Centre and F&B Hotel Services to analyze their evolution.
Is involved in defining the strategy, standards, processes and procedures that accompany it.
Analyze the competition and propose trends and improvements to the F&B Hotel Service Team.
Is responsible for creating, analyzing and acting on the P&L of F&B, ensuring compliance with the KPIs marked in the budget/forecast of the Operations Center together with the Business Partner.
With actions such as:
- Control of direct cost
- Realization of royal scandals
- Food waste control and management
- Optimization of personnel cost
- Revenue control and optimization
- Analysis of revenues and products sold based on Menu Egineering
- Business Review newspaper
- Creation of the annual CAPEX listing
- Creation of annual OPEX listing
Is responsible for the F&B Forecast, reviewing and supporting the review of it, as well as its achievement.
Together with the CO Director and the Revenue Managment team.
Prepares the reporting of other KPIs related to the F&B function and monitors them according to the requirements of the Operations and Management Control Center.
Sets prices for all centralised cards based on the competition and segmentation of the different hotels, together with the distribution team and the management.
Together with the commercial department, establishes the pricing and offer strategy for events, meeting rooms and congresses.
Conduct feasibility studies for Expansion leads in line with the brand and destination of the asset together with the Director of F&B Corporate.
**PROJECTS AND TOOLS
Is responsible for both using and supporting the F&B of its hotels, in digital tools, in order to improve the quality of data in reporting.
Is responsible for the implementation of projects, programs, technological tools (REVO, COUPA, etc. )
and processes for all the hotels that make up the Operations Center, ensuring good use of equipment, definition and resolution of doubts, and to provide feedback to the relevant Cross Teams.
Receives from the hotels, any incidence or point of improvement detected in terms of gastronomic offer and performs the reporting of product standards, service and attributes.
Supports the F&B figures of your hotels in operational needs.
**PRE-OPENINGS
Responsible for reviewing and updating the critical opening path
Responsible for acting according to the tasks assigned to your position in the established opening process.
**FOOD SECURITY
Responsible for the implementation of the Food Safety Regulations.
Participates in the results of HACCP (Hazard Analysis and Critical Control Points) audits and in the case of incidents, supervises the development and implementation of action plans to solve them.
Official interlocutor in health matters between the Public Administration, hotels and external auditing companies.
**SUSTAINABILITY
Responsible for the implementation of the Company's Sustainability strategy.
Ensure the management of food waste (overproduction, depletion, expiration, awareness, etc).
Propose local sustainable initiatives (reduce, recycle and reuse).
