In this project, we aim to study the effects of the Mediterranean diet on the plasma levels of some markers that have been associated with the biological age of the subjects. In particular, the following activities will be carried out: Analysis of the inflammatory and metabolic parameters analyzed on subjects subjected to the Mediterranean diet collected in the context of previous Projects. Analysis of the changes in the profile of Volatile Organic Compounds (VOC) in response to the nutritional intervention carried out in previous projects. Implementation of an in vitro model for the evaluation of the inflammatory response in response to treatment with compounds derived from the Mediterranean diet.
